Nice fish is a common term guides use to describe fish to other guides.
Generally speaking (in regards to Sturgeon):
It was over 6 feet, it was not foul hooked by the angler by mistake, it was a nice colour, it has been eating well, and it put up a damn good fight!
I might be being a bit counterfactual when I say "all the fish".
